Self–awareness.
To finish this thoughts of mine, I guess one has to feel and experience this concept of "sattva" through the own body, to fully understand it and should not just rely on ideas and concepts of other people or 'experts'. They might give cornerstones, but can't substitute ones own experiences. In my case so far, the bodily postures called asana in yoga bring more and more awareness, to what the body and mind like and what definitely not.
Sometimes, eating feels like tapping in the dark, when I can't find out why my skin is itching, or when I can't breath properly. Until I realize, that in the midst of winter, pollen are here already and again. I had/have to learn a lot through feeling unwell, mental chaos, diseases and a surgery and I wish that others, including myself, would no longer have to experience such things.

Maybe things turn for the better, if we think about our habits and make little adjustments slowly and from time to time.
