Sweet Saffron
Pear Pie.


Ingredients for 1 serving

3–4 tbsp
Buckwheat flour

½ tbsp
Flaxseed flour

½ tbsp
Coconut blossom sugar

1 tsp
Sesame oil

1 tbsp
Poppy Seeds (optional)

Pear (e.g. Comice)

Saffron powder

Maple sirup

  1. Preheat oven at 200° top/bottom heat.

  2. For the batter, mix all the ingredients up to water with a spoon/spatula and add as little liquid as it forms a thick viscous batter.

  3. Pour batter into a wide coated form, or on a lined out baking tray. The batter shouldn't be higher than 1 cm high.

  4. Now coarsely grate the pear. Spread immediately on top of the batter. Scatter saffron and maple sirup on top.

  5. Place the pie in the oven. Bake for 30–45 min. until top is golden and batter is hard and crispy.

  6. Allow to cool on a rack. Cut into pieces and enjoy.

heavybelly!  During winter time I occasionally eat cooked pears. Surely I shouldn't – I still try out fruits once in a while. If you’re prone to pollen allergy or/and fructose intolerance you have to decide yourself if you can digest this. I don’t recommend it (but mhhh).
