Sweet (Carrot)
Loaves.


Ingredients for 4 muffins

4 tbsp
Buckwheat flour

1 tbsp
Flaxseed flour

3 tbsp
Coconut blossom sugar

⅓ tsp
Bicarbonate

⅓ tsp
Tamarind paste

1 tbsp
Sesame oil

1 tsp
Cardamom* and/or 

⅓ tsp
Saffron

Rock salt

1 pcs
Carrot*, peeled and grated (e.g. dragon carrots)

Water

  1. Mix all the ingredients well in a bowl, with a spoon/spatula and a little water.

  2. Add only as much water as it forms a viscous batter.

  3. Pour the batter into 4 small molds, e.g. made of metal (brush with sesame oil), and bake at 200° top/bottom heat.

  4. After about 30 minutes, do the toothpick test: if nothing sticks to them anymore, they are ready.

  5. After cooling on a rack, four fluffy rolls should come out of the mold easily.

How
to

* leave aside carrots if you have allergy symptoms and pollen count is high.
* during spring time I use rhubarb instead (one stalk, cut in small pieces).

* If berries are tolerated, you can also try variations with strawberry, raspberry or blueberry.
