Cauliflower
Hummus.


Ingredients for 1 serving

1 small
Cauliflower

little
Water

Rock salt

2 tsp
Sesame oil

1 tbsp
Tahini (white, fine ground)

1 tbsp
Black cumin

1 tbs
Sesame seeds (white)

2 tbsp
Water

Tamarind paste

  1. Chop cauliflower into small chunks. Put them in a frying pan, add little water, one teaspoon sesame oil and little salt. Simmer with closed lid until vegetables are soft and tender. Make sure, all the liquid is dissolved. I recommend to fry them light golden at the end, as it enfolds a savory cheese like taste.

  2. When done add the vegetables into a mini chopper or food processor, as we want to create a hummus-like texture. Also add tahini and if needed some water. Depending on your taste process it into a creamy or lightly chunky texture. Add more salt if needed and spread it on a plate.

  3. For the topping we heat the remaining teaspoon sesame oil, add black cumin and sesame seeds and fry them until popping. Sprinkle on top of the cauliflower hummus.

  4. Some also like to top with drops of tamarind paste and with sea salt flakes or black cumin oil.

Pick up with raw mini lettuce leaves (better choice would be some steamed broccoli florets
) or buckwheat turmeric pancakes.
